The full size and miniature bottles have never looked so good!

Chocolate essence, anyone? This is an experimental batch of organic cocoa for extraction into a chocolate essence. The final result was amazing and we should hopefully be offering the essence through the website soon.

This is a batch 500 tiny 5cl bottles heading off for a dinner. Somehow it does not feel like 25 litres of gin. We are doing 5cl bottlings of both the “8” and “88” organic molecular gins and we should hopefully have some to offer through the website soon. Stocking fillers for Christmas, anyone?

Japanese sudachi have a unique aroma and we have just received our shipment for this next set of gin batches. The sudachi is a small lemon used in Japanese cuisine. Here is a handful of our mini, 20cl bottles before they wing their way off to Japan. Thank you to Oyama-san and his wife for their invaluable help honing the label translations.

We are gin of the month at the Royal Standard in Ely! Thanks to Mike for sending us this picture… we are glad you enjoy them as much as we do!

The bottles are in! The new batch of bottles came in from Thames Distillers today and we are busy fulfilling back orders. The new, coloured bottles are beautiful!

We often distil a mixture of the botanical with alcohol: a sort of botanical soup. We find that this gives us access to a broader range of molecular flavour notes than filtering them out before distillation. It also means that we get some beautiful patterns on the bottom of our distillation flasks…

The labels for the latest batch are just in from Label Apeel, who have done a great job matching our colours for the Linden Leaf. Hopefully will all work smoothly at Thames Distillers when they bottle for us next week.

Some lovely Kaffir limes in from Colonial Growers in Portugal. We are looking at the different flavours notes in Kaffir lime zest and juice as compares to the lime leaves. The variety of scents in the Kaffir lime zest is astounding and we are looking forward to testing (and maybe tasting?) the extracts.
